Friends, the time has finally come for me to share the recipe that has been rocking my world with you. It is funny that I’m so obsessed with these fries because I’m not exactly a fan of green beans. And by not a fan, I mean I can’t stand them. Or so I thought.

In my personal diet, I have really been challenging myself to step outside the box and reconsider foods I grew up thinking I disliked. Doing so has opened up my world to foods that are now staples (I’m looking at you eggs and peanut butter), and has made me a better cook because I’m thinking of creative new ways to use ingredients I previously turned my nose up to.

These babies are lightly breaded with an almond meal mixture, then baked to crispy perfection. I love serving alongside some Tessemae’s ranch for dipping (not sponsored, I just really love it and buy it with my own moolah). They are also amazing with marinara too.

Now, let’s transition a little bit and talk about life, blogging, and everything in between.

In general, I am feeling better than I have ever felt. Anyone who knows me knows I am the queen of over-committing myself. For years I have anxiously scurried from one commitment to another, rarely taking inventory on how  I was feeling and whether those commitments were serving me. At the end of 2016, I made the tough decision to take a few things off my plate and have focused more on enjoying downtime and giving much-needed attention to my personal relationships. Oh and I’ve actually been getting an adequate amount of sleep for the first time in years. It feels so dang good.

Moving on, let’s chat about blogging. If you’ve been around for awhile, you have probably noticed some of the content is starting to look different. Instead of just sharing recipes every week, I have been diving deeper into conversations about fitness, self-love, and maintaining a healthy mindset. If I’m being honest, I LOVE talking about these topics and feel like I’m finally finding my voice on this platform. Don’t get me wrong, I love cooking and will continue to share recipes, but I want to share them when I’m inspired to make a creation I love. Not because I feel like I “have” to in order to keep you guys coming back.

You’ll Need…

  • ½ lb Green Beans, washed and trimmed
  • 2 Eggs
  • ½ Cup Almond Flour
  • 2 Tablespoons Parmesan Cheese or Nutritional Yeast
  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Paprika
  • ½ Teaspoon Sea Salt
  • ¼ Teaspoon Black Pepper

 

Directions

  1. Preheat oven to 400F and prepare a baking sheet with a silicone baking mat or parchment paper.
  2. Whisk together eggs in a shallow bowl. Set aside.
  3. Put the almond flour, parmesan or nutritional yeast and spices in a separate shallow bowl. Mix together.
  4. Begin by dipping the green beans in the whisked egg, then dip in the almond flour mixture until completely covered.
  5. Place coated green beans on a lined baking sheet and bake for 15-20 minutes, or until crispy and golden brown.
  6. Remove from the oven and serve immediately with your favorite dip.
