The Perfect Spring Dish: Shrimp And Asparagus Pasta

  • Angel hair pasta
  • Red bell pepper, julienned
  • 1/4 cup lemon juice
  • Lemon zest
  • 6 tbsp butter
  • 1 tsp olive oil
  • Asparagus
  • Red pepper flakes
  • Salt
  • 1 lb Shrimp
  • Curly leaf spinach


Cook pasta to al dente and set aside. Next, sauté one pound shrimp in three tablespoons of butter – add salt and red pepper flakes to taste. Set aside when cooked through. Then lightly sauté red bell peppers and asparagus in one teaspoon olive oil. When those are al dente toss with ¼ cup lemon juice and cut the heat down and add three more tablespoons of butter. Stir it all, then toss spinach on top and add the shrimp back in. Cover and cook two minutes on low, remove from heat, toss with pasta and sprinkle with red pepper flakes and lemon zest. You’re ready to eat!
